Cynthia Falatic (Ritz-Carlton) Workshop: How smell triggers memory Toasted Marshmallows, Apple Pie, Bread, Chocolate Cookies… wonderful aromas that triggers memory… Cynthia went to Le Cordon Bleu in London and worked for several prestigious hotels. Currently chef Pastry of the Ritz Carlton Hotel in San Francisco, she has a vast knowledge of how to use the freshest local produce and dairy in creating the finest desserts. Jonathan Silverman (Feel The Earth) Workshop: Touch SENSE Interactive Zone Cycle through these fun engaging interactive activities: an EARTH ELEMENTS zone, a GERMINATION zone, and a SEEDS INTO THE LAND matching zone! Jonathan is the “victory farmer”who has founded Feel the Earth, a non profit organization to support actively healthy and sustainable food through “hands-on” interactive workshops in sustainable agriculture, community gardening, and community based events. Marianne Despres (El Sur) Workshop: introduction to street food How to turn an authentic French 1970 Citroen H-Van into a Food-Truck? Learn more about El Sur mobile kitchen and how to cook fresh and local Argentine style empanadas served directly from the oven ! Marianne is the Chef/Owner of El Sur Food truck. After running a successful catering business in the Bay Area specializing in fine French cuisine, Marianne realized she most enjoyed cooking and sharing the food she grew up with from Argentina and Peru… Nathan Beriau (Ritz-Carlton) Workshop: LISTEN TO FOOD Listen to the funny sounds that food makes when you are either preparing or eating. You’ll discover not only that sound really ties in the quality and freshness of ingredients but also that there are many healthy alternatives for snacks. Nathan is the executive Chef of the Ritz-Carlton Hotel in San Francisco .Known for his contemporary style and creative use of seasonal ingredients, he’s influenced by California cuisine and strongly committed to promoting local farmers and sustainable producers. Mateo Boucher Workshop: Highlight pomegranates. History, origin, and nutritional value overview of pomegranates. Discovery of how to open, prepare, and taste the fruit Mateo is a chef consultant for The Real Food Company, bringing local, seasonal, organic and allergy-friendly foods to the market. He’s working on opening Harbinger Cafe, a gluten-free, allergy-friendly, organic omnivore café. Germain Biotteau Workshop: EAT WITH YOUR EYES How does food appearance influence your taste? A fun and tasty game with macarons to show the importance of sight and appearance in cooking. Germain is pastry chef at Chantal Guillon Macarons. Pastry apprentice at 14 years old, he’s been influenced by experiences all around Europe as well by his collaboration with the prestigious pastry chef Christophe Michalak at the Plaza Athénée in Paris . His daily challenge is to use the traditional techniques as a tool for innovation and creativity. Lunch boxes prepared by the prestigious Le Cordon Bleu will be distributed after the workshop.
